Introducing.. What I'm Cooking Wednesday!

I'm really excited about my new weekly blog - What I'm Cooking Wednesday! 

Oscar is getting ready to jump into the crazy journey of diet elimination, where he eliminates the top 8 allergens from his diet. Soon we'll be eliminating dairy, soy, wheat, gluten, eggs, nuts, something I can't remember and shellfish. 

Overwhelming, is really the only word that can describe how I feel about the process. We have an appointment with our dietician on the 13th to dive into it deeper, but in the meantime, I'm working hard to do two things: 1: start cooking foods that are allergy free and 2: fill Oscar up with ALL of the things he won't be able to have. 

Y'all we've legit had Culver's the last two days for lunch because pretty soon we won't be eating out at all - too risky! 

So every week I'll be sharing a little bit from my kitchen.  Recipes that Mike and I are enjoying, recipes that the kids are enjoying and recipes that are allergy free.

This week we've been making a TON of nachos.  They're super easy & a great way to sneak in some veggies!

So here's how we make our nachos! 

Grab a cookie sheet and fill it with a layer of your favorite tortilla chips. Then take some shredded chicken and layer over the chips. Next take your favorite veggies and toss them on top.  We love peppers and onions on ours!  Next layer with your favorite Mexican cheese.

Then toss into the oven at 350 degrees until the cheese is melted!

Pull them out and ENJOY :) 

Seriously, super easy to make & incredibly easy to customize! 

The best part is when Oscar goes dairy free we just need to swap out our cheese for a vegan cheese and we're ready to roll! 

I'm working on my first reel to showcase how I make them, but you'll have to wait and see if it turns out.  Until then, let me know if you try the nachos.
